Thanksgiving happened, and I thought I did a kitchen notebook last year but apparently I did not.
I think I may have used too much salt for the dry brine this year because it was way saltier than last time. Next time I will back off on the amount but keep the same 24hr brine time.
I tossed a bunch of aromatics in the bottom of the pan this time before roasting and while I don't think it made much of a difference for the turkey, I tihnk it did for the stock we made afterwards.
We didn't make any gravy this year and just used drippings for flavoring. It was fine, but I think I will make some next year because I miss it.
I made two sweet potato pies and I still have a bunch more puree so maybe I will make sweet potato bread and another pie. This is I think the most accurate of the Patti LaBelle sweet potato pie recipes because it uses evaporated milk instead of half and half or regular milk. Halve the amount of sugar and do 50-50 white/brown for flavor. This makes a not-so-sweet pie that pairs perfectly with whipped cream for serving.
I think I may retire the sage crockpot stuffing. It wasn't bad at all, but I think I want something that contrasts more flavor-wise with the turkey, something a little more vibrant and acidic. This KAF recipe looks good, but I'm not sure why it has you make muffins instead of just a pan of cornbread. Maybe you can mod it for pre-packaged cornbread stuffing, idk. We'll see.
